Intestinal allergies (celiac)- treatment

The most disseminated among the intestinal allergies is celiac. Celiac is an allergic reaction to gluten, a protein that is found in many grains, especially wheat, barley, rye, oats, while other sources of starch is not (rice, maize, millet, potato, tapioca, beans, …).

Treatment
At present a diet without gluten, continued throughout life, is the only treatment possible, but you are studying other alternatives to diet aglutinata.

The remedy for celiac is not to consume frumento e and wheat altri cereali contenenti glutine, other cereals containing gluten, which in our food culture is difficult: many prefabricated industrial products contain wheat flour.

For the bread, as higher natural (acid) during the fermentation process breaks down the gluten in amino acids not more allergens. But where there is still the baker that bakeries in this way? Warning: in many cases the bread sold bread as a “natural leavening” is not!

The food industry produces nowadays is that bread dough without gluten. Replace wheat cereal with gluten-free flour or deprive the protein, so it becomes only the starch.
